Max bitrate and frame interval
I'm curious what I should be setting the max bitrate and frame interval to for my cameras. I have Trendnet cameras. Mostly 4 or 8 MP and I've been setting them to 10 fps with a max bitrate of 4096 and a frame interval of 20, based on random Google searches. Is there a recommendation or way to calculate this for best performance? Resolution is 3840x2160 and encoding is H.265. I have 50 cameras on an M1 mac mini with 16 gigs or RAM and an OWC ThurnderBay.

If the camera gives you a choice between VBR and CBR then I recommend that you choose VBR - this way, the camera can respond to different conditions by increasing/decreasing its bit rate where necessary. This usually is associated with a quality setting, and you should set this to a medium or medium-high value. It's fine to set the bitrate here to the maximum value offered - the camera will only go this high if it determines that it's required at any given time.
In terms of the key frame interval, this should be set to around 2-3x the frame rate, so 20-30 in your case.

Thanks, Ben. I've made those adjustments and I've decreased all camera frame rates to 6 fps to handle the load of 50 cameras.
