H.265 is relatively new, and SecuritySpy currently can't use it, because the Apple API that SecuritySpy uses for video compression and decompression (VideoToolbox) currently doesn't support it. I expect that Apple will add this (perhaps in the next macOS system update), at which point we'll be able to support it.
The H.265 format itself is a bit better, in that it has lower bandwidth than an H.264 stream at equivalent quality.
